I don't know of any exclusive vegetarian restaurants, but I had dinner at the Hasanaga, on Mescit Sokak with a vegetarian friend and she was more than satisfied. We had a bit of a hard time finding it because it's on a backstreet, but once there, we had a very pleasant evening. The garden in the back makes for a great setting, and sometimes they bring a musician to play live music. It's not too expensive, and here's the number in case you need it: 242 8105.
